Leurs feuilles entrent dans la recette d\u2019un grand classique : les capuns des Grisons. Les bettes ont toutefois presque failli tomber dans l\u2019oubli, chass\u00e9es des \u00e9tals par les \u00e9pinards.<\/p>\n<p>Ce l\u00e9gume rec\u00e8le pourtant de pr\u00e9cieux nutriments : riche en prot\u00e9ines, il contient des vitamines A, E et K, des sels min\u00e9raux (magn\u00e9sium, sodium, potassium, fer, etc.)<br \/>et du b\u00eata-carot\u00e8ne, qui joue un r\u00f4le dans la pr\u00e9vention des maladies cardiaques et du cancer. On lui pr\u00eatait jadis des vertus contre les troubles gastro-intestinaux et l\u2019an\u00e9mie.<\/p>\n<p>Comme son nom l\u2019indique, la bette est de la m\u00eame famille que la betterave, mais \u00e0 la diff\u00e9rence de cette derni\u00e8re, on n\u2019en consomme pas la racine. Avec ses tiges allant du rouge au jaune, la bette \u00e0 c\u00f4tes rehausse tous les plats de pommes de terre, de riz ou de p\u00e2tes.
